Called From Farm To Table, the book features recipes from each of the Green Safaris chefs, along with an introduction to their culinary journeys and why the dishes they’ve chosen to celebrate are so special. Much of the lodges’ produce comes from community gardens, established and maintained by the GSCF. This commitment to quality ensures that every meal not only nourishes guests but also blows their tastebuds away.

Meet Chef Zuwi Nawa

One of the chefs featured is Zuwi Nawa, who heads up the kitchen at Tongabezi on the Zambezi River near the Victoria Falls. He sees his role as crucial in keeping abreast of market trends to maintain the lodge’s relevance and competitiveness. In a dynamic food landscape where tastes are ever-changing, this proactive approach assures guests that Tongabezi stays modern and aligned with current dining preferences, setting it apart as a preferred destination for discerning diners. ‘At Tongabezi, adapting to evolving dietary preferences is a top priority’, explains Zuwi. Embracing broader societal movements toward healthier and more mindful eating, he and his team integrates trends like organic, gluten-free, and plant-based options into the menu. The use of organically grown vegetables is a testament to Green Safaris lodges’ commitment to sustainability and health. Many of the vegetables, herbs and fruits served at Tongabezi are grown in their own gardens, using a combination of compost and kraal (farmyard) manure, without the use of herbicides or pesticides. This practice not only supports a healthier environment but also enhances the flavour and quality of dishes.

Guests are invited to visit the gardens, interact with the gardeners and choose their own ingredients for their meals, adding a personal touch to their dining experience.

‘Ultimately, my goal as a chef at Tongabezi is to broaden the chefs’ palette of ingredients, techniques and flavours, enabling them to craft dishes that stand out in a competitive food market’, Zuwi adds. This approach ensures that every meal at Tongabezi is not just a dining experience but a memorable journey through taste, innovation, and sustainability.
